This recipe was inspired by one of my favourite pasta dishes that my mum would make as a child, which was basically penne pasta with a creamy pumpkin soup sauce. Although I love pasta, in my vegan version of this dish I’ve swapped pasta for something I love even more- gnocchi. Not only is gnocchi super tasty, the pre made gnocchi you get from the supermarket only takes around 2 minutes to cook, which makes this dish super quick and easy to cook. It also uses a pre-made can or packet of pumpkin soup, and most supermarkets will stock at least one dairy free variety of pumpkin soup. Alternatively, if you’d prefer to make your own you can always cook up a big batch and store it in smaller portions in the freezer to defrost before you want to use it, that way you can still prepare this dish in just 5 minutes.
